Annika's requests for recipes

The dill pickle recipe was posted on July 31, 2008

Cherry Raisin Cookies
1/2 cup butter
3/4 cup granulated sugar
1/2 cup sour cream
1/2 teaspoon almond extract
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
3/4 cup raisins
3/4 cup dried cherries
Heat oven to 375 F. Cream butter and sugar until smooth. Add sour cream and almond extract and blend. In a separate bowl, mix together the flour and baking soda (and 1/4 teaspoon salt if you want, but I never use salt), and add to the creamed mixture. Stir in raisins and cherries.
Roll and flatten balls of dough on an ungreased cookie sheet, and bake until lightly golden brown, 15-17 minutes. Transfer to a rack and cool.

Fruit ketchup - This is from the Bernardin recipe book, which is worth every penny of the $7.95 or whatever, if you want a bunch of really fun recipes in one book.
4 cups each chopped tomatoes and peeled peaches
2 cups chopped apples
1 cup finely chopped onion
3 cloves garlic, minced
1 cup honey
1/2 cup white vinegar
2 tsp dry mustard
1 tsp each: salt, pepper, ground cloves
1/2 tsp ground allspice
1/4 tsp cayenne pepper

Combine tomatoes, peaches and apples in a large stainless steel pot, heat gently, mashing fruit until juices flow. Add onion and garlic. Bring to a boil, cover, and boil gently 10 minutes.
Puree mixture, measure 5 cups ( I think I just used what I had, which was more than 5 cups). Add honey, vinegar, mustard, salt, pepper, cloves, allspice, and cayenne pepper. Boil gently, stirring occasionally , uncovered, 45 minutes or until the consistency is what you want.
Makes 4-5 500 ml jars. Process the jars in a boiling water bath for 15 minutes.
